March 2020 is Over, Now Let’s Talk Cucumbers

Phew! March 2020; what’s there to be said? Except that I’m sure glad it’s over with! It most certainly came in like a LION and went out like one too. It’s no wonder a ‘reality’ show about big cat zoos was all the rage on Netflix 😏

March 2020 has left me feeling emotionally numb, and physically depleted. During this time of crisis, I know there’s no point in worrying about potential storms on April’s horizon but, that it’s also important to stay informed.

What’s in store for us? Nobody really knows. I believe that we’re in for a bumpy ride. But I’m also optimistic that if we work together, we will be enjoying May flowers with family and friends.

Anyway — enough about that, this I Love Cowichan blog post is about keeping things cool as a cucumber 😎 🥒 Literally.

Today I made the perfect batch of cucumber pancakes. Though, I suppose “cucumber crepes” sounds classier 🙂 I’m not sure of the website, but I once saw a recipe online for deep frying cucumbers in a pancake batter. I’ve since made them from memory multiple times. Which is to say that they’re never the same way twice.

This latest batch was the most nummilicious yet so I’m finally writing it down.

Cucumber Pancake Recipe

  • 1 cup pancake mix
  • 1 cup of water
  • 3 tablespoons dill pickle juice
  • 2 teaspoons dry dill weed
  • 3 tablespoons dry Parmesan cheese
  • 2 tsp garlic pepper
  • 4 tablespoons breadcrumbs
  • 2 tsp lemon juice
  • 1/2 cup finely grated extra old white cheddar
  • 2 English cucumbers washed and sliced
  • Grape seed oil for frying
  • Salt to taste

Combine pancake mix, 1/2 cup of water, 3 tbsp pickle juice, 2 tsp dill weed, 3 tbsp Parmesan, 2 tsp garlic pepper, and 1/2 cup grated cheese in a bowl. Mix by hand with a fork. Add 2 tsp lemon juice, 4 tablespoons of breadcrumbs and the rest of the water. Mix well

Add the cucumber slices to the pancake mixture. Stir them gently until they are coated with the batter.

Place coated cucumber slices in the heated oil. in groups of 4 in the pan. Drizzle some batter on top of cucumber slices so that they are covered. Cook until golden brown for 2 or 3 minutes each side.
